Kombucha is pretty varied in its flavor profile. You can find this fermented, fizzy tea with subtle aromas, punchy bubbles, and even sour fruited flavors. In the recent years that kombucha has become popular, small batch brewers have been popping up all over New York State. You’ll find some by the bottle available in stores, some on tap in breweries, or even full kombucha tap-rooms dedicated to the craft.

Since it will likely be something you’re thinking as you run through this list, the task of dividing up New York into regions is nearly as complex as brewing a perfect glass of booch! Almost no one (even official state entities) has an agreed upon, official standard for separating the regions of the state. You will likely disagree with where some of the borders are drawn here. Try to remember the most important thing on this page is getting you connected with a great locally brewed kombucha.

Happy Gut Sanctuary

Located right in the heart of downtown Rochester just a minute’s walk from High Falls is a sanctuary for a happy gut. These guys have been brewing kombucha in Rochester since 2017, and in the years since they’ve grown into an established local brand. They’ve won international awards for their unique ferments and use flavors not often found in kombuchas like Lapsang Chouchong. You can visit their taproom/cafe in downtown Rochester for a cup on draught, or grab bottles to go.

When Katerina Eddy first started showing up at events with a cart of kombucha around Rochester, word got around that it was not to be missed. From her humble beginnings of doing pop-up events, she’s grown her business to a full-scale kombucha brewery and tasting room in Rochester’s Public Market.

This small-batch, woman-owned kombucha producer is one of the newest to set up shop in Rochester. The flavors available typically are inspired by cocktail flavors like mimosa and mule. You’ll find bottles available in certain shops around town, but you’ll also find her at events and pop-ups doing tastings and selling bottles.

This husband-and-wife team have set up in the 500 Seneca building in Buffalo’s Hydraulics District. They started up around 2018 and have since become one of the only kombucha brewers in the city, and the only one where you can walk into a retail space and hang out with a booch on draught. You can have a glass or a flight on site, or get growlers to go.
